🐟 Coconut Curry Basa
Mild, creamy, and perfect for introducing kids to new flavors.
Ingredients (serves 4):
- 
4 basa fillets, cut into chunks 
- 
1 tbsp olive oil 
- 
1 onion, finely chopped 
- 
2 cloves garlic, minced 
- 
1 tbsp mild curry powder (or yellow curry paste) 
- 
1 can (400 ml) coconut milk 
- 
1 cup diced tomatoes (fresh or canned) 
- 
1 tbsp lime juice 
- 
Salt & pepper to taste 
- 
Fresh cilantro (optional), for garnish 
- 
Cooked basmati rice, for serving 
Method:
- 
Heat oil in a large pan. Sauté onion and garlic until soft. 
- 
Stir in curry powder and cook 1 minute. 
- 
Add coconut milk and tomatoes; simmer 5 minutes. 
- 
Gently stir in basa chunks. Cook 5–7 minutes until fish flakes easily. 
- 
Add lime juice, season with salt & pepper, and garnish with cilantro. 
- 
Serve with basmati rice.
