KABOOM WILD BLUE COD
- 454g wild blue cod fillets
- 1/2 cup Kaboom Fish Coating mix
- 2 tbsp olive oil or oil for pan frying
- 1 egg
- 1/8 cup milk
- salt & pepper to taste
Rinse thawed blue cod fillets and paper towel pat dry. Mix egg & milk to make n egg wash. Place 1/4 cup of Kaboom mix in a plate to coat 2 fillets. Dip each fillet into egg wash & coat well with coating mix. Add the remaining 1/4 cup Kaboom mix to your plate to finish the last 2 fillets. Place coated fillets in the fridge for 20 min. After refrigerated, prepare your frying pan and preheat to med high with oil. Add fillets and cook each side about 5-7 min or until meat is white and flaky.
Blue cod is slightly firmer or more mild than wild Alaskan cod. It is joy to coat with your favourite breading! Serve with Humble & Frank's Cajun Chipolte Tartar sauce. It's as delicious as it sounds, actually. For a single serving, only about 1/8 cup is needed of the Kaboom coating mix. Enjoy with your favourite veggies for a healthy meal!
