Spanish Smoked Paprika Shrimp
1 lb peeled, wild caught shrimp
1 tbs butter
Drizzle olive oil
1 clove garlic, minced
1/2 tsp hot smoked paprika
Pinch sea salt
Heat butter and oil in sauté pan. Add shrimp and toss well. Add garlic and then paprika. Serve with bread when shrimp is firm and pink.
2 tbsp olive oil
1 med courgette (zucchini) , cut into chunks
1 each red & yellow Pepper cut into small chunks
1 fish bouillon cube
1 can (400ml) tomato sauce or stewed tomatoes
1. Pan fry courgettes and peppers in oil for until softened and lightly browned, add stock & stir in the tomato sauce & continue to cook for 5-7 min
2. Stir in shrimp & cook for 2 minutes on med high
Serve in bowls with crusty bread.
