Arctic Char Bacon & Onion
- 300-400 g fresh Arctic char
- 1 cup of onion, chopped small chunks
- 1 cup of diced bacon
- 1 clove of garlic, chopped
- 1 tbsp parsley
- 3 tbsp butter
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 lemon
Directions:
In a frying pan, saute onion, garlic, and bacon in butter. Fry until onion is translucent but do not completely cook bacon. Prepare a baking sheet with foil & place some of your sauteed mixture as a bed for your char fillet. Place the fillet on the bed mixture on the baking sheet, sprinkle salt, pepper, parsley & lemon juice evenly. Coat with remaining sautteed ingredients on top of the filet. Bake the fillet at 375 degrees for 25 min or until meat is flaky and cooked throughout. Bacon should be also done & crisp. Serve with spicy vegetable gyoza!Try serving with a side of sauerkraut for that extra vitamin-c! Arctic char is an excellent source of heathy fats and protein. The bacon adds so much flavour, and let's face it, what doesn't go with bacon! You'll love this combination!
