Baked Cod Fillets
Do you meal prep for lunches? Like trying different light dinners? This recipe could be for you. It's easy to prepare, and pairs well with garden vegetables, like a pan-fried zucchini dish, cauliflower rice or tossed salad. Re-freeze once cooked or easily store in your meal prep container.
Ingredients:
1lb cod loins or haddock loins
1tbsp olive oil
3tbsp grated parmesan cheese
Humble & Frank's Lemon Honey Herb Sauce
salt & pepper to taste
Directions:
In a bowl, coat cod or haddock loins with the marinade sauce. There's an option to refrigerate up to 3 hours in marinade if you prefer. Using an oiled broiler pan or regular pan and tin foil lightly oiled, place marinaded cod or haddock loins on your pan. Top with half your parmesan cheese. Bake at 350 degrees for about 10 minutes or until fish is flaky and white. Add remaining parmesan cheese. Makes 2-4 servings.
