INGREDIENTS:
1 lb pickerel fillets
2 tblsp olive oil or butter
salt & pepper
zest of lemon
2 tsp spices of your choice like garlic, thyme, or an oregano mixture
1/2 cup feta cheese, optional
1 red or green pepper, optional
PREPARATION:
Prepare a baking sheet with lightly oiled parchment paper. In a mixing bowl, combine fillets, seasonings, oil or cooled melted butter and gently mix until fillets are coated. Place fillets on baking sheet with peppers if using. Broil on low for about 5-10 min depending on your oven. Broil until fillets are flaky and golden on top. As an alternative, you may want to bake for first for 5-10 min. and then broil on low for 3-5 min. Serve with a topping of feta cheese if you wish.
