INGREDIENTS:
1 lb snapper fillets
2 tblsp paprika
1-2 tsp cayenne pepper
2 tsp black pepper
1 tblsp fine sea salt
2 tsp onion powder
2 tsp garlic powder
1 tsp dried thyme
1 tsp dried oregano
3/4 cup butter
3/4 cup mayonnaise
PREPARATION:
Mix spices together in a low dish like a pie pan and set aside. Place mayonnaise in a low bowl as well. Prepare your frying pan by adding half your butter and melt on medium heat. Coat each fillet with mayonnaise then dip each side in spices, coating thoroughly. Place directly into frying pan. Add remaining butter. Fry each side for about 4-5 minutes or until flaky. Serve with melted butter.
Adjust the amount of cayenne pepper to your desired hot & spicy-ness. Serve with steamed vegetables. Great for a low carb diet on a cold winter night.
