INGREDIENTS:
1 lb or 5 fillets Sole Fillets
4 tblsp butter
salt & pepper
2-3 stalks of celery
1 cup of mushrooms, diced
1 clove of garlic, crushed
2 tblsp almond flour
1/2 cup milk or cream
1 tblsp parsley or cilantro
1 egg
1/4 cup parmesan cheese
paprika to taste
1/2 cup white wine, optional
1 red or green pepper, optional
PREPARATION:
To make stuffing, saute in butter the celery, garlic, and mushrooms (and pepper if using). Add salt & pepper to taste. Add wine, if using, milk or cream, and flour. Stir in cheese and mix until thickened. Brush fillets with melted butter and place on baking sheet with non-stick spray. Add about 2 tblsp of mixture onto fillet and fold over. Use a toothpick to hold together if desired. Sprinkle with paprika. Bake uncovered for 25 minutes or until fillets are completely cooked through. For more crispness, broil on low for 5 minutes or until outer layer is golden.
Serve with your other entree items or with a side of asparagus or other steamed vegetables. This is a delicious, hearty but light meal and you'll be amazed at how easy it is to make. Enjoy!
