Creamy Dreamy Cod
Dreamy Creamy Cod & Mushroom
- 454 g fresh cod
- 2 cups heavy cream
- 2 cups shredded cheese
- 1 tblsp dijon mustard (or substitute with mayo)
- 2 cups sliced mushrooms
- 1 clove or 1 tsp minced garlic
- 2 tblsp butter
- 2 tsp olive oil
- 2 tsp parsley flakes
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp red pepper flakes
Directions:
In a frying pan, melt butter and saute mushroom slices and garlic. Add cream stirring often, bring to a boil and then let simmer. Add 1 cup cheese, mustard, and spices to simmering cream mixture and stir for about 4-6 minutes. Prepare a baking pan, lined with foil and covered lightly in olive oil, spoon a thin layer of cream mixture on pan. Lay cod fillets over layer then add the rest of the cheese, salt & pepper on cod fillets. Then pour over the remaining cream mixture. Add to your preheated oven and bake for 35-40 minutes at 350 degrees. To be sure the dish is done, check that the cod flakes easily and cooked throughout. You can broil on low for 4-5 min. to add a crispier texture if you desire.Try serving with a side of bok choy seen here pan fried in olive oil and sprinkled with red pepper flakes. It's so flavourful! Serve your dreamy creamy cod dish with a crusty bun or rice. Cod is slightly sweet but meaty and with the cream it's so warming and delicious and of course, cheese, is the icing on the cake!
