Easy 2 Ingredient Bacon Wrapped Cod
INGREDIENTS
- 9-12 slices of bacon
- 3-4 cod loins
INSTRUCTIONS
- Thaw bacon & cod loins
- Generously and fairly tightly wrap 2-3 slices of bacon around each cod loin in order to completely cover the fish
- Place on parchment or foil covered baking sheet and bake at 350 degrees for about 30-40 min or until cod is white, flaky and bacon crisp
- Broil on low for about 2-4 min on both sides or until bacon is at the desired crispness
- Pack up for your next lunch, enjoy for dinner, or can be frozen for your meal plans.
OPTIONS: Replace cod loins with haddock loins, deboned whitefish or large pickerel fillet
