Egg Lox Asparagus Reboot

Ingredients

  • 4 large eggs 

  • vegetables to garnish

  • salt & pepper to taste

  • 1 tsp butter or desired cooking oil

Directions

  1. You will need two pans. One to prepare your asparagus and the other for your eggs.

  2. Begin with asparagus, use about half your butter on medium heat and place asparagus in the pan. Use tongs to turn over asparagus a few times. Be careful not to overcook. Reduce heat after 2-3 minutes and put on the lid. Check for doneness after 5-6 minutes and remove from heat.

  3. Prepare your eggs in another pan. Poached eggs work well with this dish or easy over. If you like a hard yolk, then prepare as desired. 

  4. Salt & pepper eggs & asparagus to taste.

  5. Place asparagus on a plate, cover with 1/4 to 1/2 of your sockeye lox, then place the egg on top of the lox. Garnish with vegetables like radish or tomato. 

  6. Serve with a side of crusty bread. 

Makes 2-4 servings. You may have a preferred method for cooking asparagus, like steaming or baking, which will also work well. The point of this recipe is to show these great simple tastes coming together in a healthy dish that will make you feel good and won't hurt the budget.
