Garlic Tomato Basil Pickerel


  • 454g pickerel fillets
  • 2 cups grape tomatoes
  • 1/2 cup finely chopped onions
  • 1 tblsp minced garlic
  • 3 tblsp olive oil
  • 2 tblsp mayonnaise
  • 2 tsp parmesan cheese
  • 1 tsp oregano
  • salt & pepper
  • fresh basil 
  • fresh cilantro


    In a bowl, mix halved grape tomatoes, garlic, onion, parmesan cheese, spices, herbs, & olive oil. Prepare a baking pan with parchment paper and make a layer with about one third the tomato mixture. Prepare fillets by brushing with mayonnaise on both sides and lay on top of your tomato mixture in the pan. Spread evenly the remainder of the mixture over the fillets. Bake in preheated oven at 375 degrees for 22-24 min or meat is flaky. To finish, broil on low for 4-5 min.
