Halibut & Herbs
Ingredients:
1 lb halibut fillets
1 lemon, quartered
olive oil for brushing
1 teaspoon sea salt
1 teaspoon garlic powder
1 tablespoon dill weed
Directions:
Preheat oven to 375 degrees.
Prepare a baking sheet with foil or parchment paper and grease with olive oil.
Rinse the fish and pat dry.
Place on the oiled pan and brush the fish with olive oil.
Squeeze the juice from the lemon wedges over the fillets.
Season with salt first, then garlic powder and finally dill weed.
Bake for 15-20 minutes in the preheated oven, until the meat is white and flaky. Be careful to not overcook.
To add a crispy texture, broil on low for an extra 3-5 minutes.
Baking and broiling times may vary depending on the thickness of your fillets.
Serve with a side of asparagus and sour cream or plain greek yogurt or on a bed of pasta, like fettuccine Alfredo. The seasoning is simple and mild and brings out the natural flavour of the halibut which is slightly sweet and has a moist, mouth-watering texture.
