Lobster Rolls

Warm Butter Lobster Rolls (Serves 2–3)
Based on 200 g uncooked lobster meat
Ingredients

200 g lobster meat, chopped into bite-size pieces

2–3 split-top buns (depending on how full you like them)

2 tbsp butter (plus extra for toasting buns)

1 tbsp mayonnaise (optional)

1½ tsp lemon juice

¼ tsp salt (or to taste)

Fresh cracked black pepper, to taste

1 tbsp fresh chives or parsley, finely chopped
How to Make It

Cook the lobster gently
Melt butter over low heat in a skillet. Add lobster meat and cook just until opaque and tender, about 2–3 minutes. Do not brown. -
Season
Stir in lemon juice, salt, and pepper. Remove from heat. Fold in mayonnaise if using. -
Toast the buns
Butter the cut sides of buns and toast in a pan until golden. Add a cheese topping (optional). -
Assemble & serve
Divide warm lobster evenly between buns. Finish with fresh herbs and serve immediately.
