Mahi Mahi Shrimp Tacos

Ingredients for fish:

  • 170g mahi mahi fillet
  • 454g med to lg shrimp
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/4 teaspoon cayenne pepper
  • salt & pepper to taste

Suggestions for the filling:

  • 1 cup pico de gallo salsa
  • 1 cup guacamole
  • 1/4 cup grated carrot 
  • 1 cup sliced red cabbage 
  • 1 cup fresh chopped cilantro

Prepare mahi mahi fillet & shrimp for grilling. In a bowl, mix spices for fish. Take half of the spice mixture in another bowl, add mahi mahi fillet, coat with spices, and some olive oil. Do the same in another bowl with shrimp. Grill on bbq for about 4-5 min per side or until mahi mahi meat is white & flaky and cooked throughout & shrimp is cooked thoroughly. You are striving to have your seafood crisp, fairly firm, but not overcooked or dried out. A grilling pan for your bbq works great. After you've removed your seafood, cut mahi mahi into cubes and set aside in a serving dish. Put shrimp in a serving dish. Set out the rest of your filling & taco wrap ingredients each in their own dish with serving utensils. 

 
Mahi mahi is versatile, meaty and great for grilling. Try adding more mahi mahi and less shrimp for variety. Drop a dopple of a spicy, creamy sauce like one from Humble & Frank. Enjoy on the deck on a warm sunny day with a cold beverage.  Can't wait for that!
