Multiple Salmon Meal Ideas 

*Start with 454-680 grams of salmon fillets

Baked Salmon with Dry Rub

Ingredients:

2 tblsp olive oil

2 tblsp brown sugar (or sugar substitute like Swerve)

1 tblsp chili powder

1 tsp cumin

1/4 tsp pepper

pinch of sea salt

pinch of garlic powder

Directions:

Prepare the baking sheet. You can use a cooking rack if you want. Rub your salmon with olive oil. Mix together all dry ingredients to create your rub. Take a spoonful at a time and rub into salmon, top and bottom or just top if salmon has skin. Rub each fillet thoroughly, coating generously. Place fillets on baking sheet and bake in pre-heated oven at 350 degrees for about 20 min or until salmon is cooked evenly throughout. Broil on low for 4 min on each side to add a firmer, crispy texture.

Depending on how much salmon you have left, about 85 grams works well with 3 eggs. Cube your salmon. Prepare eggs, whisking in a bowl, add salt, pepper, cilantro if you like, garlic powder if you like. Add a dash of olive oil, then salmon to frying pan on medium. You may want to add chunks of bacon as well. Add egg mixture, stir to desired doneness. Serve with your favourite morning vegetable! And it's that easy to make a healthy meal with your left overs!
