Mussels & Pasta
What you need:
- 2 lbs fresh PEI mussels or (frozen mussels are a great substitute)
- 1 tblsp Melo's Finest sunflower oil
- 2 tsp red pepper flakes
- salt & pepper to taste
- 2 tsp minced garlic
- 1/2 cup water or white wine
- your favourite pasta & melted garlic butter
Directions:
Prepare your mussels by rinsing in cold water in a colander. Heat oil in a deep pan, saute garlic for about a minute. Add your mussels, water or wine, and seasonings. Cover your pan and rock back & forth to disperse liquids and seasonings. Allow to steam until mussels shells are open. Once they are open, continue to cook with the lid on for about 3-4 minutes or until meat is at the desired texture and taste. Place desired amount of mussels with pasta in a large mixing bowl and toss with tongs and serve.This is great to try with a flavourful pasta like spinach pasta because the ingredients you need are minimal and simple.
