INGREDIENTS:
454g salmon fillets
2 tblsp butter or olive oil
2 tblsp Swerve brown sugar substitute
1 tblsp mayonnaise
1 tblsp minced garlic
1 tsp red pepper flakes
1 tsp cilantro
1/4 tsp sea salt
1/4 tsp pepper
1 tsp soya sauce
1 tsp lime juice
PREPARATION:
In a bowl, combine spices, Swerve and mayonnaise, mixing well. Add salmon to mixture, coating thoroughly. Heat skillet or frying pan at medium to medium-high and melt butter. Use tongs to transfer salmon to pan. Cook on side for 4-6 min or until lightly golden then turn over to fry other side. Salmon should be golden and slightly crispy on the outside and a flaky consistent texture on the inside.
Try with wild sockeye salmon loins. They nicely cook evenly throughout and the wild taste blends so well with the sugary sweet, crispy coating. Garnish with lime and serve with your favourite greens!
