INGREDIENTS:
454g shrimp (wild, cooked or raw)
454g vegetables (frozen or raw)
1 tsp lemon juice (optional)
2 tblsp olive oil
1 tblsp minced garlic (optional)
sea salt
pepper
PREPARATION:
Prepare shrimp, rinse in colander with cold water. Remove shell and tail if any. For raw and wild raw shrimp, pan fry on medium with olive oil until not quite done. For cooked shrimp, pan fry vegetable mix first and add just before vegetables are done. When pan frying, heat pan with olive oil and cook vegetables until not quite done. After stirring in shrimp with vegetable mixture, continue to fry while mixing gently with spatula or wooden spoon. Add salt & pepper to taste. Cook for 3-4 minutes or until desired texture.
One great way to get your veggies & using minimal spices allows the flavours of your main ingredients to really shine. Serve as a side dish to your breaded pickerel or lobster tails. Substitute shrimp with scallops for a variation on this simple dish. Enjoy the simplicity, enjoy your dinner!
