Haddock loins/ fillets have a delicate flake and slightly sweet taste. It has a wonderful melt-in-your-mouth appeal with lean meat that is a firm yet tender texture. The loin is cut from the thick section on the underside of the fillet and can be sauteed, poached, or pan-fried and work well in soups and stews.
