Lobster Tail Prep Tips

Thaw in fridge for 24 hrs (do not thaw at room temp or in warm water).

Do not cook from frozen – results in tough, chewy meat.

Rinse under cold water before cooking.

Remove digestive tract if present (dark line along tail meat)

Meat should be firm, ocean-fresh, no strong odor or discoloration.
