Whitefish has a high fat content, a mild flavour, and it has a medium firm texture with a large flake. It can be ground for chowders, baking, or patties and is excellent smoked or as pan-fried fillets. Whole Whitefish can be baked, broiled or grilled with dill, lemon, and onion.
